Spanish food and culture have been at the core of Michael’s culinary philosophy since he created the Sala Astoria concept in 1987 while studying abroad in Segovia, Spain. In the late 90’s, he teamed up with Barbara Amoros (Spain’s Top Chef finalist) of Valencia to bring his dream to life.

Executive Chef
Barbara was vital to the development of Sala Astoria’s menu and remains the Executive Chef to this day. She and Michael have had concepts on the Bowery from 1999 to 2011, as well as a second successful location in Manhattan from 2004 to 2020. She is committed to ensuring that Sala Astoria maintains its authentic Spanish roots at WAM.
